A globally renowned Japanese noodle shop, Kajiken, has introduced Melbourne to aburasoba—its signature “dry ramen” that swaps broth for flavorful oils and sauces. With over 100 outlets worldwide and a debut Australian presence in Sydney last year, Kajiken’s Melbourne store promises a lighter yet equally satisfying noodle dish, ideal for hot summer days.

What Is Aburasoba?

Aburasoba, which translates to “oil noodles,” is a soupless alternative to traditional ramen. Despite its name, the dish isn’t greasy. Instead, wavy yellow noodles are tossed with a mix of oils and sauces, creating a base for toppings such as chashu pork, soy-marinated eggs, and spring onions. Kajiken offers 11 variations in Melbourne, with highlights like spicy minced pork, fried soft-shell crab, and rare wagyu beef slices.

Customizable Bowls and Toppings

Customers can personalize their aburasoba with 14 topping options and three styles of eggs: onsen (soft-poached), ajitama, or raw yolk. Each bowl is designed to be mixed thoroughly upon serving, allowing the sauces and ingredients to coat the hot noodles evenly.

Diners can also enhance their experience with table-side condiments, including chili oil, rice wine vinegar, and garlic chips.

More Than Just Noodles

Kajiken’s Melbourne menu also features Japanese street-food classics like takoyaki (octopus balls), ebi croquettes, donburi rice bowls, and matcha soft-serve. The cozy, light-filled venue, located at Southern Cross Station, seats 35 and is perfect for quick solo visits or small groups. Takeaway is also available.

A Local Touch

Kajiken has adapted its offerings to Australian palates. Marketing manager Link Lin explains, “Our Japanese team spent two months researching local ingredients and flavors to create a unique experience.”

While aburasoba stays true to its traditional roots with lighter, balanced flavors, it also draws inspiration from mazesoba, known for its bold and experimental taste profiles.

Expansion Plans

Following the success of its Melbourne and Sydney locations, Kajiken is planning additional outlets across Australia. The Southern Cross venue, which opened in October, already serves 200–300 customers daily, proving that Australians are embracing this innovative take on ramen.
